When September arrives, the fields of Navarre turn red. It’s the color of the Lodosa piquillo pepper, one of the most representative products of our land and a symbol of how we understand work well done.

At El Navarrico, every harvest season is much more than a key moment on the calendar: it’s the culmination of a full year of dedication, starting in the field and ending at your table. It’s also the moment when tradition, innovation, and origin come together to create something unique: the authentic Lodosa piquillo pepper with Protected Designation of Origin.

We work only with the P.D.O. Piquillo Pepper of Lodosa

From the very beginning, at El Navarrico we committed to working exclusively with piquillo peppers protected by the Piquillo Pepper of Lodosa Designation of Origin. This seal guarantees the provenance, quality, and unique characteristics of this very special product, grown in a specific area in the south of Navarre and under strict controls.

Every pepper that reaches our cannery has been grown, picked, and processed following the traditional criteria required by the P.D.O.

We care for the product from the root

We carefully select the seeds, tend the fields alongside our trusted farmers, and accompany the crop at every stage. Harvesting the Lodosa piquillo pepper is carried out by hand, one by one, as tradition dictates. Only then are the shape, shine, texture, and that slightly sweet, roasted flavor preserved.

Craftsmanship in every step

After picking, the process remains as artisanal as ever. In our factory:

  1. We peel the piquillo peppers by hand, one by one, without water or chemicals, to preserve their flavor as much as possible.
  2. We prepare them for canning or stuff them with care, maintaining their integrity.
  3. We pack them under the highest standards of quality and food safety.
  4. This work is done by people who have been with us for decades. As María, after 30 years on the peeling line, says: “Every pepper has its character. I can recognize them just by touching them.”

Although we respect the traditional way of working, we also aim for continuous improvement. That’s why we incorporate technologies that allow us to optimize processes, reduce waste, and maintain excellence without losing our essence.
