Today we bring you a recipe that blends traditional flavors with a gourmet twist: baby fried broad beans with confit cod and Iberian ham. A delicate and satisfying dish that could easily steal the spotlight at your table.

PREPARATION

  1. Confit the cod: In a small pot, submerge the cod in olive oil, add the peeled garlic cloves, and cook over very low heat for about 45 minutes with the skin side down. Do not allow it to boil.

  2. Meanwhile, sauté the onion gently in a bit of oil until soft and translucent.

  3. Add the white wine and let it reduce. Then stir in the well-drained baby broad beans, the diced Iberian ham, and a spoonful of the confit oil. Sauté for a few minutes until the ham starts to brown.

  4. To plate: Place a warm layer of the beans in the center of a shallow bowl. Drain the cod on paper towels for a few seconds, then place on top of the beans.

  5. Final touch: Garnish with fried or chopped chives, a drizzle of the confit oil, and if available, some edible flowers for a gourmet presentation.
