100 g of extra virgin olive oil

25 g of sugar

25 g of balsamic vinegar

15 g of chopped pistachios
PREPARATION

Drain the leeks well and pat them dry with paper towel. Sear them lightly in a hot pan with a bit of oil until golden. Set aside.

In a separate small pan, melt the sugar over medium-low heat until it caramelizes. Carefully add the balsamic vinegar little by little, stirring gently to dissolve the caramel into a tangy syrup.

Remove from the heat and emulsify the mixture with the olive oil until smooth and glossy.

Arrange the leeks neatly on a flat plate. Drizzle the warm caramel vinaigrette over them and sprinkle the chopped pistachios on top.
